Client Note

If this is for the client with the no-melon preference, pack soft grapes only and remove melon.

Cook Times - Longest To Shortest

🟧 🔥 1. Butternut Squash Soup - 55 to 70 minutes total

Longest item. Start first. Roast or simmer squash until fully tender; blend smooth.

2. Beef Stroganoff with Sour Cream Mushroom Sauce - 40 to 50 minutes

Brown beef, build mushroom cream sauce, and combine gently.

3. Egg Noodles - 10 to 12 minutes

Cook close to packing time so they do not over-soften.

4. Cream of Wheat - 8 to 12 minutes

Cook smooth and loose; finish with cream.

5. Buttered Peas - 6 to 8 minutes

Keep bright, soft, and buttery.

6. Turkey Cranberry Cream Cheese Wrap - 6 to 8 minutes

Assemble cold; wrap tightly.

7. Toast with Butter - 3 to 5 minutes

Best packed separately if being reheated.

8. Soft Grapes - 3 to 5 minutes

Wash, dry well, and portion.

15-Minute Time Block Schedule

5:00 - 5:15 AM

Open kitchen. Sanitize work area. Pull containers, labels, tape, marker, delivery bags, ice packs, sheet pans, saucepans, blender, cutting board, towels, and tasting spoons. Start water for soup base and egg noodles. Pull beef, turkey, cream cheese, peas, cream, sour cream, mushrooms, squash, grapes, and bread.

5:15 - 5:30 AM

🔥 Start longest item: Butternut Squash Soup. Peel and cube squash if needed, or begin roasting/simmering. Start onions or mild aromatics gently in butter. Add squash, stock, salt, and mild seasoning. Simmer until very tender.

5:30 - 5:45 AM

Prep stroganoff mise en place. Slice mushrooms. Portion beef. Mince mild onion or shallot if using. Measure sour cream, cream, stock, butter, flour, or roux thickener. Set egg noodle pot nearby.

5:45 - 6:00 AM

Begin stroganoff. Sear beef quickly in batches, then remove. Saute mushrooms in butter until tender. Deglaze lightly with stock or a mild wine reduction if using. Build the sour cream mushroom sauce base.

6:00 - 6:15 AM

Continue stroganoff sauce. Return beef only long enough to finish tender and moist. Keep sauce slightly loose for reheating. Stir soup and check squash tenderness. Wash and dry grapes; portion fruit container.

6:15 - 6:30 AM

Blend butternut squash soup until smooth. Adjust with cream or butter for texture. Taste for salt and mild seasoning. Hold warm briefly. Begin cooling soup in a shallow container if delivery is later.

6:30 - 6:45 AM

Cook egg noodles. Toss lightly with butter so they do not stick. Keep separate from stroganoff if possible for better texture. Cook peas until soft and tender; finish with butter and light salt.

6:45 - 7:00 AM

Cook cream of wheat with maple syrup, cinnamon, and cream. Keep texture soft and slightly loose. Prepare toast with butter, or pack toast separately depending on service and reheating preference.

7:00 - 7:15 AM

Assemble turkey cranberry cream cheese wrap. Spread cream cheese evenly, add turkey and cranberry, roll tight, and slice if desired. Wrap securely. Portion stroganoff, noodles, peas, soup, cream of wheat, toast, and grapes. Label all containers.

7:15 - 7:30 AM

Final packing check. Wipe containers. Confirm lids are tight. Add reheating notes. Pack hot and cold foods separately. Load delivery bag in order of use: breakfast easiest to access, lunch next, dinner last. Final kitchen wipe-down and trash removal.
